'Build a new life': Prospect bakery owner chasing the American Dream

THOSE IDEAS INTO REALITY IS HER AMERICAN DREAM. FOR GENERATIONS, THE IDEA OF THE AMERICAN DREAM HAS LURED MILLIONS TO OUR SHORES. AND NOW, THOUGH SHE DIDN’T PLAN IT THIS WAY, THE OWNER OF ROSE BAKERY IS GETTING HERS. LIKE SO MANY OF US IN MARCH OF 2020 TURNED THE LIVES OF LUBNA AL-TUJJAR AND HER FAMILY UPSIDE DOWN. WE COME TO SPEND LIKE, SOME TIME, ME AND MY DAUGHTER AND, UM, I WAS IN THE BEGINNING OF MY PREGNANCY THEN, AND WHEN WHEN WE COME UP AFTER, LIKE A MONTH WHEN WE COME HERE, COVID START, UH, SAUDI ARABIA SHUT ALL THE AIRLINES. WE CAN’T GO BACK. LUBNA KNEW SHE WAS PREGNANT WHEN SHE ARRIVED IN KENTUCKY. BUT WHILE SHE WAS HERE, SHE FOUND OUT SHE WAS EXPECTING TWINS. AND AS FATE WOULD HAVE IT, SHE GAVE BIRTH TO THOSE TWINS WHILE IN LIMBO. EVENTUALLY, LUBNA’S HUSBAND WAS ABLE TO JOIN HER IN THE UNITED STATES. UNABLE TO RETURN TO SAUDI ARABIA, THE REUNITED FAMILY DECIDED TO START OVER. WHEN HE COME. AFTER THAT, WE STUCK HERE LIKE FOR FIVE MONTHS. DURING THIS TIME WE WERE THINKING ABOUT LIKE, OKAY, WHY WE WHY WE GO BACK? WE CAN STAY AND DO OUR LIKE, UH, BUILD A NEW LIFE AS PART OF THAT RESET, ROSE BAKERY AND PROSPECT WAS FOUNDED IN AT HOME BAKER MOST OF HER LIFE. LUBNA VIEWS THIS OPPORTUNITY AS HER AMERICAN DREAM. I WANTED SOMETHING IN MY NAME TO LEAVE IT TO MY KIDS AND I WANT THEM TO BE PROUD WHEN THEY LIKE, OH, WE ARE THE THE NEXT GENERATION OF THIS BUSINESS. I ASKED LUBNA, OTHER THAN YOUR LOVE OF BAKING, WHAT MADE YOU WANT TO OPEN ROSE BAKERY? SHE SAID IT’S SIMPLE. I LOVE PEOPLE

Like so many of us, Lubna Altajjar, owner of the Prospect, Kentucky, Rose Bakery, and her family had their lives turned upside down in March 2020."We came here to spend some time with my daughter," Altajjar said. "I was at the beginning of my pregnancy, and then after about a mother, COVID started, and Saudi Arabia shut all the airlines, and we couldn't go back."Cutting cinnamon rolls at Rose BakeryAltajjar knew she was pregnant when she arrived in Kentucky after the pandemic broke out. This is when she found out she was going to have twins. It was then the dream of something more started."When he came, we were stuck here for five months, and during that time, we were thinking, why would we go back? Lubna views this as her chance at the American Dream."I wanted something in my name to leave it to my kids," Altajjar said. After giving birth to her twins here in Louisville, Lubna's husband was able to join her several months later. It was then the dream of something more started.

"When he came, we were stuck here for five months, and during that time, we were thinking, why would we go back? We can stay and build a new life," Altajjar said.

From the idea of that reset came Rose Bakery, specializing in cookies and cakes. Lubna views this as her chance at the American Dream.

"I wanted something in my name to leave it to my kids," Altajjar said. "I want them to be proud like we are the next generation of this business."

Rose Bakery is open Monday through Saturday.
